Farmer’s Wife Recipe:  Country Caviar

 

  • 1 can black-eyed peas, drained

  • 1 can white hominy, drained

  • 1 can yellow hominy, drained

  • 1 can black beans, drained

  • 1 can corn (regular/Mexican/shoepeg), drained

  • 3 green onions, thinly sliced

  • 1 medium pepper, red/yellow/green, chopped

  • 1 can Rotel, regular or mild

  • 1 bottle of Italian dressing

 

Combine all ingredients, mix lightly. 

Cover, chill at least 2 hours or up to 24 hours, stirring occasionally. 

Drain. 

Before serving add chopped tomatoes, avocado, and fresh cilantro, if desired.

Can substitute desired cans of beans/legumes.

Serve with scoop chips as a festive dip!
